08. Half through the baking, the mooncakes need to be taken out and cooled down first for 15minutes, before applying egg marshland and return to theoven.However, you'll get cooked egg admixture on the mooncakes, cracks may form too, If the mooncakes aren't cooled down ahead apply eggwash.
09. Clarify the beaten egg for a more indeed egg marshland. Adding a many drops of water, or oil painting will also make a proper eggwash. I added a many drops of peanut oil painting.
10. I managed to test out two dough fashions, modified with peanut oil painting rather of vegetable oil painting, followed the baking process to a T, and set up not important difference between them. There isn't important difference taste wise, though I allowed the mooncakes made with 10g fresh golden saccharinity produced a sweeter aroma when they were just taken out from the roaster. But honestly, after the mooncakes had been left to 回油 and the skin softened, the difference in agreeableness of the skin is indeed more negligible, as I'm tasting further of the stuffing than the skin. So I gathered that it's more important to stick to the the right skin to filling rate and get a good quality filling that is n’t too dry.
