Top-to-tail lamb harvest and butchery intensive.
Saturday, November 15: 9am-1pm - Lambs will be humanely harvested on pasture and then transferred to the barn for hide removal and evisceration. Lambs will be stored overnight under refrigeration.
Sunday, November 16: 9am-1pm - Attendees will be instructed on how to custom butcher their lamb to their desired specifications. Cuts will be wrapped and labeled for your freezer.
Each day will start with hot coffee and conclude with a homemade lamb lunch!
Sessions will be taught by Heather Oppor, Master Meat Crafter and butchery instructor at Madison College and Southwest Tech and assisted by Nathan Fredrickson, butcher at Meat People in Monona, and Heidi Hoff, Vice President of Meatsmith Co-op.
Each registration includes up to two guests to take part both days.
Payment is $600 for two days of instruction and whole lamb.
Deposit of $50 upon registration.
