Chiso started out as an art project - I wanted to make beautiful food. I imagined a jar with perfect layers inside, like a sculpture.
Chiso <地層> is the layers of the earth in Japanese. As a food, it is simple: a humble and healthy snack to feed the community in the style of Japanese comfort food. I first made it for the New York Art Book Fair in 2014.
From there it reached other satellites of the Downtown arts community - a local radio station, Dimes and various events. It became well loved and a staple of the scene.
I listened to my friends’ voices, and adapted the recipe over time - making it nut-free, gluten-free and vegan.
Chiso is vegan, gluten free and does not contain nuts. Like traditional bento, it’s easy to take with you and eat on the go. All ingredients are organic and local. You can eat it in many ways depending on your mood - layer by layer from the top; dig down for each layer in every bite; or mix it all up!
