Rice - 4 cups
Onions - 3
Tomatoes - 2
Potatoes - 5 medium size
Salt - 2 tsp
Cinnamon stick - 1
Kala zeera - 2 tsp
Bay leaves - 2
Elachi - 3 or 4
Longs - 3 or 4
Yogurt- 1 cup
ginger/garlic paste- 2 tablespoons
Chicken
Yellow food color
For 1 chicken- 2 pounds meat?
4-5 onions medium sliced
Oil-2.5 cup oil
Brown onions
Take out onions and put into blender
Keep oil in pot
And 1 cup yogurt, ginger garlic paste 2 teaspoons each but 3 tsp if combined, into blender- blend and leave in jug for a few minutes
Go back to oil and add chicken (washed and drained) turn on oil again
1 pack of Shan Bombay biryani to oil and cook till chicken is a little white. Maybe 7 minutes. Don’t let masala get burned.
If getting black, quickly put in blender stuff or just don’t don’t add masala until after cooking 7 minutes.
After cooking chicken and adding masala, add blender stuff.
Rinse blender with a little water and pour into pot.
Stir well. Make sure enough liquid so it doesn’t burn and turn heat to between low and medium and cook for 1/2 an hour. Stir every ten minutes, cover with lid.
Peal aloos on the side. 4-5. Cut into 1/2 of small or 4 pieces of big.
After meat is cooked add aloo. Can add more water if needed. Maybe 1 cup.
Cook 15-20 minutes. And check every 10.
While aloo is cooking. Take another large pot and fill 3/4 water. Add 3-4 tsp salt. 3-4 elaichi, 3-4 long, 2-3 cinnamon sticks if small. 2-3 bay leaves, 2 tsp kalaa zeera, boil on medium till lightly brown.
Wash 4 cups of rice, and add to water while boiling, for 15 minutes. Leave slight undercooked( slightly shiny, but not too hard and not transparent/soft).
Salan should be ready, have nice brown color) oil should be on top. If not on top. Sprinkle few drops of water on it and cook on low for 5 minutes and oil should come up. If not just turn off.
Scoop out as much oil into separate bowl.
Drain rice and wash with warm water. So it stops cooking and starch is washed.
Use roast pan or foil tray( has to be flat) for oven. Preheat 420 oven
Put half rice in foil tray, then scoop whole masala and spread evenly on top.
Can add some mint leaves( dried (quarter cup) the crushed or fresh (15).
Add second layer of rice.
Take oil and stream it over rice with small spoon. Try to spread. Remaining can be saved
Take 1/3 cup water and add yellow food color and spread like oil.
Cover tray, and put into oven at 420 degrees. Bake 20-25 minutes, in middle rack.
