Healthy lunchbox idea: Salmon Poke

Preparation: 10 minutes
Cooking time: 3 minutes
Ingredients:
150g of chopped, uncooked, peeled salmon in cubes of ½ cm
1 avocado
100g cooked rice
2 tablespoons of olive oil
2 teaspoons of soy sauce
10g of minced/chopped green chili pepper (optional)
10g of peanuts (optional)
Juice and rind of one lime
¼ of a minced/chopped onion
12 cherry tomatoes
Pinch of salt
8 rice crackers
Preparation:
Put the oil in a pan on medium heat.
Add half of the pepper and cook for 30 seconds, mixing.
Then add the rice, peanuts, and a teaspoon of the soy sauce.
Cook for 2 minutes, continuing to mix, then leave it to cool.
Grate the lime and then squeeze it. Mix the salmon with the lime juice, half of the grated rind, and the rest of the soy sauce.
Mix the tomatoes with the onion, the rest of the lime rind, pepper, olive oil, and a pinch of salt.
Put all the elements in the compartments of the lunchbox as depicted in the top picture. Enjoy!
