Even if you don't use IE you really need to install updates. If a hacker gains entry to your system, they may attempt to abuse a known vulnerability that you could have patched but didn't and then your problem is compounded. Additionally, since IE is a shell used by some other browsers (and other applications), if you're using one of those tertiary browsers (such as Maxathon) you would be stuck with an older version of IE that renders the pages (even though the interface is something else).

Best I could find was the Lifecycle Policy for Edge and IE where it's noted that IE 11 for W10 will be kept updated but doesn't state how the updates can be deployed. I also found a couple of W10 KBs that have some IE updates included.

Yes, Internet Explorer 11 is the last major version of Internet Explorer. The Internet Explorer 11 desktop application went out of support for certain operating systems starting June 15, 2022*. Customers are encouraged to move to Microsoft Edge with Internet Explorer (IE) mode. IE mode provides built-in legacy browser support for sites requiring Internet Explorer. For supported operating systems, Internet Explorer 11 will continue receiving security updatesand technical support for the lifecycle of the Windows version on which it is installed. Microsoft is committed to supporting Internet Explorer mode in Microsoft Edge through at least 2029, on supported operating systems. Is there a way to disable future updates of Internet Explorer on a windows server 2012 R2 system? In the IE11 -> "About Internet Explorer" window there is no check box anymore for "Install new versions automatically". Strange because windows 8.1 still has it. How are you receiving Windows Updates? Via. a controlled WSUS server, or directly from Microsoft's Automatic Update service? If it's via WSUS you can remove these updates from the WSUS server, or control the method you are approving updates. If it's from the automatic update service from Microsoft, I think your best bet is hiding the updates in the Windows Update app (start->run->wuapp) then finding the update for Internet Explorer and right click -> Hide Update. This will prevent it from showing up again, but you will have to do it again for the next version available.

Internet Explorer still has some small deaths to die.
