"Ferrers Fellows Bake Off" Recipe

Ingredients

170g or 6oz margarine

170g or 6oz caster sugar

170g or 6oz self-raising flour (sifted)

3 eggs (beaten)

Jam

Oven temperature: Gas mark 4, 350 F, 180 C, Fan 160

You will need: two greased 18cm sandwich cake tins

Method

  1. Preheat oven
  2. Cream margarine or butter in mixing bowl until soft and fluffy
  3. Add sugar and cream again until combined
  4. Add beaten eggs slowly one at a time while still beating the mixture
  5. Fold in flour
  6. Divide mixture between the two cake tins
  7. Bake in oven for 30 minutes or until ready
  8. Remove from oven and allow to cool before turning cakes out of tins
  9. Sandwich together with jam.
