Serves 8
1 medium-size ripe pineapple
2 cups maple syrup
Peel the pineapple. Cut it vertically into quarters and remove the woody core. Cut each quarter crosswise into 1/2" slices.
In a heavy-bottomed saucepan, bring the maple syrup to a boil. Wait until it builds up a good head of golden froth, then turn off the heat.
Add the pineapple and stir to coat each slice with syrup.
Transfer to a bowl and cool to room temperature before serving.
