(or really, Helen’s sister Sid’s, but she always swore no one outside the family would ever like it…)
½ pound medium egg noodles, cooked, but not too soft
½ pint sour cream
1 cup milk
1 pound pot cheese
¼ cup sugar
3 eggs
1 teaspoon vanilla
½ cup raisins
cinnamon and sugar
Combine all ingredients in bowl, except cinnamon and sugar.
Pour into buttered 8 x 8 baking pan (glass is best).
Sprinkle with cinnamon and sugar; top with sliced apples if you like.
Bake 30-45 minutes at 350° until fairly firm. Cool before serving.
For 13 x 9 pan, double all ingredients.
Helen Rausnitz is my mom. Despite my aunt swearing that no one outside the family would like this, everyone loves it, and one of my husband’s Latin co-workers has now made this a regular part of her family’s celebratory foods. -Joan
