Some OTA updates lock the possibility to go back to an older version of the firmware. If you checked the changelog of the last update you received, you might have noticed it mentioned. This is a tried and tested method to extract PIT from Samsung firmware. I tried this again today to check if it works and it really did. Are you using the stock zip extractor that comes with Windows? Try WinZip or PowerArchiver.
