What is Mayonnaise?
Mayonnaise is a thick, creamy sauce or dressing that is made of oil, egg yolks, lemon juice or vinegar, and seasonings.
Mayonnaise is an emulsion, which is a mixture of two liquids that normally can't be combined. Combining oil and water is the classic example. Emulsifying is done by slowly adding one ingredient to another while simultaneously mixing rapidly. This disperses and suspends tiny droplets of one liquid through another.
However, the two liquids would quickly separate again if an emulsifier were not added. Emulsifiers are liaisons between the two liquids and serve to stabilize the mixture. Eggs and gelatin are among the foods that contain emulsifiers. In mayonnaise, the emulsifier is egg yolk, which contains lecithin, a fat emulsifier.
The History of Mayonnaise.
Duke Richelieu
Which came first, the mayo or the egg? Most assuredly it was the egg, since mayonnaise as we know it today did not appear until the 1800s.
Food Historians offer four possible theories for the origin of mayonnaise. The most popular story dates to June 28, 1756, when the French Duke Richelieu captured Port Mayon on the Spanish island of Minorca. When preparing the victory feast, the duke's chef was forced to substitute olive oil for cream in a sauce. Unexpectedly pleased with the result, the chef christened the result "mahonnaise" in honor of the place of victory.
In 1651, The history of modern French sauces began during the reign of Louis XIV, with the great chef François Pierre La Varenne (1618-1678).
The great French chef Marie-Antoine Carême
La Varenne authored the founding cookbook of modern French cuisine, Le cuisinier françois (“The French Chef”).

What's more, the presence of oil makes it more fattening. In fact, a spoonful of mayonnaise has around 94 calories, which can simply increase your calorie intake unknowingly.
Bad impact of mayonnaise:
Weight Gain
One of the main health effects of mayonnaise is weight gain. Mayonnaise contains fat which is very difficult to burn. Moreover, mayonnaise is the main reason for pot bellies as the fat gets stored in the abdominal region of the body.
Heart Diseases
The other health hazard of mayonnaise is that it leads to heart diseases, which also involves the risk of heart attacks. The omega fats present in mayo can lead to heart diseases and cancer. This is one of the reasons mayonnaise is bad for our health.
Cholesterol
It increases cholesterol like crazy. Eating mayonnaies will also reduce your energy levels. If we are addicted to mayonnaise, it is best to avoid it as it will only affect our health in one way or the other. The increase of cholesterol is due to the fatty oil present in the mayo.
During Pregnancy
During pregnancy, women are allowed to put on only a certain amount of weight for the benefit of the baby. The health hazard of mayonnaise during pregnancy is that it makes the pregnant woman crave more junk food which is not good for health.
Stomach Ulcers
The fat in mayonnaise will only cause a rise in inflammation of the ulcers. This is one of the health effects of mayonnaise! Omega-6 Fats Commercial mayonnaise is most often made with soybean oil, corn oil or other vegetable oil blends that are high in omega-6 fats. Although omega-6 fatty acids are essential to human health, most Americans get too much omega-6 and not enough omega-3.
This unhealthy ratio, to which commercial mayonnaise and other processed foods contribute, increases your risk of developing heart diseases, some cancers, Type 2 diabetes and osteoporosis, as well as inflammatory and autoimmune disorders such as rheumatoid arthritis. Even mayonnaise that is labelled as containing olive oil, a healthier, lower omega-6 fat, only contains a very small portion of fats from olive oil; the majority of the oils still come from soybean oil or other high omega-6 oils.
