Im looking to recreate this fried chicken and wanted your feedback on the best approach to getting the texture right.

Would you suggest A) modelling the bumps and lumps OR B) using modifiers to achieve this or C) some other way.

There are many reasons this is so spectacular. It starts with a brine that locks in moisture and steeps the meat with aromatics. The chicken is dredged twice in a spiced flour mixture, which makes for a perfectly spiced and crisped skin. The whole technique is solid, straightforward, and yields the fried chicken we all deserve. I have found that if you prep the brine and flour mixture in advance, it lends itself well to entertaining as long as you are comfortable with frying. Might I suggest pairing with pickled okra and my favorite macaroni and cheese? Invite some friends over this weekend, pop some bubbly, and have yourselves a feast!

Place the chicken pieces in a gallon-size sturdy plastic bag and set in a large bowl for support. Pour the cooled brine with aromatics into the bag, sealing so that you remove as much air as possible. Refrigerate for at least 8 hours and up to 24 hours, turning the bag occasionally to redistribute the mixture.

Remove the chicken from the brine, rinse with cold water, and pat dry. Set on a rack or paper towels. (At this point the chicken can be refrigerated for up to 3 days before cooking, or can be cooked immediately.)

Dredge the chicken in the seasoned flour, shake off the excess, and set the dusted pieces on the rack. Dip the pieces in the buttermilk, then dredge again in the second dish of seasoned flour. Return them to the rack.

Heat the oil in a large, high-sided pot for deep frying to 350 F. Add as many pieces of chicken as you can without crowding the pan. Cook, turning the pieces occasionally, until they are golden brown and cooked through, 12-15 minutes. (I take them out as soon as the skin is golden brown and monitor the internal temperature with an instant read thermometer, which should read at least 165-170 F.) Remove to a clean rack and let rest 5-10 minutes before serving. Garnish with additional rosemary sprigs.

Ehh. Just so so. Crispness was great. I used 6 oz each, 2-6 oz, chicken breasts. I cooked 1 at a time in my small air fryer and cooked at 375 for 6 min each side. I used the seasoning recommendation what I think needed more red pepper. I also did not add salt and pepper which I think would have helped with the flavor. I am also not a fan of white meat chicken, I will try thighs next time.

I consider this first attempt a flop but I am willing to try again.

I made up something similar with a thick cut pork chop a while back but used pork type spices.

Chicken was perfectly cooked using your instructions. Substituted panko and Italian bread crumbs and spritzed with a little olive oil upon turning chicken over . Served with honey mustard dip. Excellent!

"The vinegar actually helps promote and expedite the osmosis that happens with the brine," he explained. "It pulls the spices and seasonings through quickly, and then the vinegar helps to break down the protein structure in the chicken."

Once brined, the chicken gets dredged in seasoned flour, just like grandma used to do, but it's then fried in vegetable oil rather than animal fat. It can then be finished with hot oil,  la Nashville hot chicken, or served relatively naked with classic Southern sides including celery seed slaw and macaroni with Ashe County hoop cheddar.

Submerge chicken in pickle brine for 30 minutes under refrigeration (20 minutes for tenders and thinly filleted breasts). Remove from brine, rinse under cold water, and dry thoroughly. Place the coated chicken pieces on a baking sheet lined with a rack to elevate them so that the bottom stays crispy also. Baking time should take 25 to 30 minutes in a 375 degree Fahrenheit oven.

This chicken is amazing! Just fried it today and it was a hit! A note: I was questioning whether 8 thighs and drumsticks meant 8 in total or 16 in total, then realised it meant 16 in total after sticking them in the marinade. Might be worth separating them into 8 drumsticks + 8 thighs?
