Back home in Bombay (and yes, India at large) we have seen a renaissance of late with chefs training overseas and returning home with a fervour to create delicious food but also work on improving the quality of ingredients by working with suppliers. Chefs like Thomas Zacarias, Prateek Sadhu, Hussein Shahzad and Alex Sanchez are doing the hard yards working with suppliers and lifting the quality of cuisine offered in the city.

And last night I went to go see Cornershop at a club inPhiladelphia. Cornershop raises questions about multiculturalismand hybridity in rock. Do they represent tokenistic rockmulticulturalism? Are they in fact a 'political' band, as many ofthe profiles of the band in the American media have suggested - -despite their rather obscure, postmodern lyrics? Or is it morecorrect to say Cornershop mines Tjinder's Indian/Punjabi/Sikhheritage for a commercial gimmick? What kind of cultural workdoes Cornershop in fact do? To narrow these questions down, I'llpose the terms rock multiculturalism and hybridity, for themoment, not as synonyms but as opposites. On the one hand, rockmulticulturalism implies appropriation, cultural mining, andgimmicky alterity. Hybridity, on the other hand, might suggest amore level kind of mutual borrowing -- criss-crossing patterns ofappropriation. If rock multiculturalism is a crass, minstrelishmainstreaming of a minority culture for commercial reasons,hybridity might be a symbiotic exchange between two paralleltraditions not driven by commercial success. In these terms, wemight pose the question as follows: does Cornershop performmulticulturalism, or does it enact hybridity? At the show lastnight I realized for the first time that I like Cornershop as aband quite a lot, but I'm deeply troubled by Tjinder'sperformance of his own ethnicity for reasons that I find hard toexplain simply. In the live show, they use the sitar on mosttracks, and it works quite well. Since they have evolved into aBig Rock Band that likes to jam in concert, the sitar makes adistinctive melodic line in what would otherwise sound like loudrock-mush circa 1975; it keeps our interest up. There's theinsistent sitar, the heaviness of the three (!) guitars, theconga player, some samples and synth- noises, and a powerful funkbass sound (I believe the new bassist used to play with Oasis).To my ear, it makes for a slight eclectic improvement of workingrock n roll in the classic rock vein (i.e., the Rolling Sones) --a pretty decent-sounding rock band overall.

--FOB Performativity. Tjinder is generally pretty muchmotionless and slouchy on stage, but when he sings his Punjabisongs he seems particularly tense, both in voice and in body.Though he's hardly theatrical, we could read the stiff deliveryas an act, a projection & channeling of the F.O.B. possiblylurking within himself, stiffly singing earnest devotional songs("Jullunder 6 AM"), or the Punjabi version of maudlinBeatles Orientalism in "Norwegian Wood." The stiffnessis part of the projection of a stereotypical FOB persona. Thequestion then becomes, does Tjinder claim that persona forhimself -- does he have these two sides of himself that variouslyfind voice in the two languages (and postures) in play? Is hetruly located at the hinge of languages, musical (rock/raga) andspoken (Punjabi/English)? Or does he use the persona precisely toseparate himself from it -- is he mimicking the silly songs andunhip phraseology of more recent immigrants as well as his (our)parents, while remaining comfortably ensconced in asecond-generation, "cool" vantage point?

--Irony. It could all be ironic: i.e., Tjinder is clowning onIndia for the amusement of Anglo-American (and perhaps alsoAsian) consumers. The vocals on the Punjabi songs on the albumsare all heavily distorted, whereas the songs in English arerecorded with his voice 'straight.' To me, this suggests that theuse of 'Punjabi' as an effect, but without an interest incommunicating the content of the songs, even to Punjabi speakers!I've been particularly puzzled by the song "Jullundar Shere6 AM," which are credited to Tjinder on the album notes, butwhich sounds very much like it's borrowed from Sikh (or I'mthinking Hindu -- I don't remember the Gyanis talking about the"sai rasta" very often at Gurdwara) devotionaltradition. The lyrics here are so earnest in their content -- incontrast to the jokey, ironic English language tracks -- as tomake the ironic reading hard to dismiss. Here's the Englishtranslation (with Punjabi in brackets here and there):

Perhaps on their latest record Cornershop solves the hybridityproblem. But if so, they do it by burying the positive attributesof difference in favor of harsh self-critique. Tjinder wields theword "wog" the way black nationalists used to use theword "nigger" against fellow African Americans they sawas Uncle Tommish. He's aware of the word's bloody history as aracial epithet used by Europeans to dehumanize people of color,but he uses it anyway as an in- house term of critique even if itdeepens those very wounds. It's clear that Cornershop wants todistance itself from what might be called 'woggy' rockmulticulturalism, but how invested is the band in the harder workof building hybridity? Sadly, not very.

Nani and I would often banter affectionately: 

"Meeta stop running around half naked! Swimming, water-skiing - this not something for young ladies- beti" (Beti = daughter) 

"But Nani I am on the swim team - I can hardly wear a salwar kameez in the pool!" 

"Swim team, swim team! Forget the swim team. Has your mother taught you how to make dal or aloo gobi yet?" 

"No nani - I am 16 I do not need to learn how to make all that Indian stuff!" 

"All that Indian stuff? Ahaha, look here - angrez di puther - you are not only Indian but you are a Punjabi and you will learn how to make aloo gobi!" (angrez di puther = daughter of an English man) 

"Not now Nani - I have to go to swim practice!"

From behind us I hear my Nana sigh. 

"Gurcharan - leave the girl alone. If she does not go to swim practice how can she save the life of her drowning husband? She can hardly throw a life saving aloo gobi at him!"

After the greens have been cooked, it is this step that truly defines saag. Good saag is slightly stringy and lacy with a luscious texture. The leaves and stems have to be broken down just enough to become a cohesive whole but not so much that you get a chutney like dish. In a traditional kitchen and until my mother was cooking even in her modern one, the best way to get this consistency was to use a wooden churner called madhani. As you churn the leaves cellulose and other components break down and dissolve into a thick lump. The tougher sections from tender stems might remain. Those unbroken bits provide a texture that is hard to replicate while using a blender.
