Ingredients:
6 large eggs (room temperature)
1 cup granulated sugar
1 tsp vanilla extract
1 cup all-purpose flour (sifted)
1/4 tsp salt
2 tbsp cornstarch (optional, for extra fluffiness)
2 tbsp unsalted butter (melted and cooled, optional)
Instructions:
Preheat oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan.
Separate the egg whites and yolks. Beat the yolks with sugar and vanilla until pale and creamy.
In another bowl, whisk egg whites with a pinch of salt until stiff peaks form.
Gently fold the egg yolk mixture into the whites. Gradually sift in flour (and cornstarch if using) in small portions, folding gently to keep the batter airy.
Optionally, fold in melted butter for added richness.
