SKEWERED WILD TROUT

This fish technically doesn’t need to be skewered, but who doesn’t love eating meat off a stick?
Active cooking time: 20 mins. Total cooking time: 20 mins. Serves 2-4
Ingredients:
2 whole rainbow trout, cleaned and with heads and tails removed
5 tbsp vegetable oil (75mL)
1 tsp salt (3g)
½ tsp pepper (1.5g)
½ tsp red pepper flakes (1.5g)
½ tsp dill (1.5g)
1 tsp lemon zest (3g)
This recipe requires a grill.
Set grill to medium-high heat and close lid. When preheated, use tongs and a cloth soaked in vegetable oil to thoroughly oil grill.
Combine salt, pepper, red pepper flakes, dill, and lemon zest. Rub spice mix into the fish's skin and flesh. Skewer fish.
Place fish skin-side down directly onto grill or onto grill in grilling basket.Close grill lid. Allow to cook for 6 minutes.Turn and cook for 6 additional minutes. Remove from grill and serve.
