“Turn the rod toward the fish.”

Ingredients:
1 salmon steak (any fish in this cut could work)
1-2 tbsp oil (15-30mL)
1 tbsp mirin (15mL)
salt and pepper, to taste
paprika powder, to taste
Clean the fish with cold water. Place on paper towels and gently press on it until all the excess water is gone.
Preheat your oven to 350°F (177°C). Heat your pan with the oil on high. Once the pan is hot, lower the temperature to medium and place the fish cut inside the pan.
Gently sear each side, including the skin rim. Add mirin, salt, and pepper on each side. Let it sizzle for a bit until the fish reaches a golden brownish color.
Place the fish inside the oven for 5 minutes. This will make sure that the inside of the fish is well cooked. Take out from oven and start plating. Add a bit of paprika on top and any garnish of your taste.
