Dry aged Meats

Wagyu,Betanzos, Simmental, Aberbeen Angus, Vaca vieja and more, depending on availability.

These meats are of a fatty nature which when cooked melts into the meat

making them full of delicious, complex flavours. 



Fresh Novillo Beef

Cut Fresh From The Rib By Our Own Chef Using Traditional Spanish Cuts By Hand


· “Solomillo”  Tenderloin Filet Steak

Grilled wrapped in bacon (Recomended max. medium done)   A Spanish butcher

cut from the tenderloin with tender texture and lean with very little to no fat.


· “Chuletón”  Ribeye Steak

Our chuletón is a spanish butcher cut of ribeye from the “high back”. Served on

it´s own fat which when cooked infiltrates the meat with greater flavor, keeping

it´s juices and flavors virtually intact.   It could be served to you with or without

the bone (*this is not an option as it depends on what has been cut and is available today) 


· “Entrecot”  Sirloin Steak

A Spanish butcher cut from the “low back” rib side without the bone, characterized by the vain of fat giving it´s juciness.  A less tender cut when compared to the “solomillo”.


· T-Bone

A cut from the “low back” of the rib where the bone has a T form, one side

of sirloin and the other has a small filet part.


· Homemade Burger 100% Novillo

Served with chips, Tomato, Lettuce & Onion on the side.  Approx 250g/8.8oz

100% made in house with 100% fresh novillo beef




Chef´s Plates

Sautèed with pepper, garlic and white wine.


· Homemade beef roll

Stuffed with mushrooms and cheese, accompanied by homemade

mash and served in our own Pedro Ximenez sweet sherry sauce

· “Lomo Alto” Angus Beef Ribeye

(Recomended max. medium done) Angus is marbled meat making the

meat richer in flavour and tender with a buttery juiciness compared to

a standard beef of the same cut.


· Chateaubriand for 2 people

(Maximum medium done). Served with homemade mushroom sauce &

green peppercorn sauceA cut from the tenderloin with very little fat

and tender texture.  Fileted at the table.

· “Solomillo” Tenderloin filet steak

A Spanish butcher cut from the tenderloin, tender texture and lean

with very little to no fat.

 

· Filét Mignon

A tender and lean cut from the narrow end of the tenderloin consisting

of 2 pieces wrapped with bacon & a mushroom.


· Grilled chicken breast

Chicken cooked on skewer with pepper and onion



Iberian Pork & Spanish Lamb

Iberian Pork is a black hoof “Pata Negra” breed, raised on a diet of acorns & the natural elements of the oak forests in the Dehesa natural pasture lands in Western Spain which sometimes gives an ever so slighty nutty flavor.  A meat that is evocative, buttery, melt in the mouth flavours due to the small lines of fat that runs throughout the meat.

· “Abanico”  Iberian pork  (Sliced & Juicy.  Fom the rib side)

 

· “Chuletillas Recental ”Spring Lamb chops

 Our spanish “recental” lamb chops are buchered with an age of between

45 & 100 days old making them suculent with subtle flavours.
