do not use Apple software update for printer driver updates unless, when you go to epson.com and look for the driver, they explicitly say to do so. The reason is that the usual Apple printer driver is the 'Gutenprint' driver and it's very basic and not appropriate for quality work that we do.

That said, if you open up System Prefs -> Printer Prefs -> select printer -> Open Print Queue -> Printer Setup -> General you should see the driver version. Under the 'Driver' heading, you should see 'CUPS', not Gutenprint (or something like that).

If working on older systems, in particular, I highly recommend searching for Apple's latest bundled driver for Epson. This solved printing issues in Snow Leopard, for example, which included restoring the Epson Utility. I have been able to use printers going as far back as Epson 1160, 1280, 1400, 2200, R220 just fine in Mac OS X.

I've never used PnPUtil - never heard of it. I researched it and believe the argument syntax is: /a not -a. I also believe that this just "adds" the driver package to the overall driver store. Therefore I'm going to have to go through installation again using Devices and Printers > Add Printer but this time the driver store should have the files available. I'm not completely sure the raw .inf file has enough info in it to traverse and set up the wireless connection - will just have to see.

I used an Epson Stylus Colour 800 with XP for several years without issue. I used the XP drivers without problem. Are you using an IEEE-1284 certified cable? It will be labeled on the cable. Older paralell cables can have issues with the 800.
