Basically me turning a jeer & cream sponger roll into a cutlet! Firstly I was n’t going to post this, but with Valentine’s Day just round the corner and me seeing nothing but chocolate durian birthday cake far and wide, I allowed I might post this up for anyone who's looking to make commodity that is n’t chocolate concentrated but still maintains the blushes of red so generally associated with this day. 🙂

I actually made this as a( super beforehand) birthday cutlet for my family back in early January as he wo n’t be at home to celebrate come his factual birthday( moment, as I post this! 🙂). As I mentioned in my Yule log post, my family is a big addict of jeer and cream swiss rolls, so I allowed I ’d make him one in the form of acake.Still coming down from the high of how incredibly springy and soft Pierre Hermé’s form for their Buche de Noël was, I decided to use the same form for my sponger layers. I managed to get four 8 inch round layers out of one form. I suspect if my roaster was bigger( the original form writes 40 cm x 40 cm and my roaster is lower) and I was suitable to spread the sponger admixture across further face area, also maybe I could have added another subcaste. But no matter! 4 was plenitude for me!
It was veritably important that I take time to make sure that all the sponger admixture spread onto my silpat was as indeed as possible, or differently I ’d end up with 4 layers of sponger of uneven consistence.
I made some jeer simple saccharinity to encounter over my sponger layers, but because this sponger form is super ethereal and soft indeed after being in the fridge I don't suppose it's absolutely necessary.
After that it was substantially about whipping up my cream and assembling the cutlet.
The frosting for the cutlet was actually a eyefuls and cream frosting! The tip is to notover-mix the Oreos in, else you ’ll find your whipped cream starts turning relatively brown. I find incorporating your crushed Oreos into the whipped cream bit by bit helps avoidover-mixing. As you can see, I used fresh snorts through the cream layers of my cutlet and to embellish. I was just durian birthday cake apprehensive that frozen snorts have a veritably high water content and when they defrost, said water begins to run. I also wanted the snorts on top of my cutlet to hold their shape whilst stroking frozen snorts would help absorb some of the water content, the jeer becomes rather flat and droopy.
