A bit similar to Play a Music Disc in Jukebox, the Smithing Table is the easy part, and the thing you're putting in it is harder. There are more steps in this goal, since (most of the time) you need:
A smithing table (4 planks and 2 iron)
A piece of armour
Any qualifying material*
An armour trim
There is another possibility, and that is that you get all of: a Netherite Upgrade Template, a Netherite Ingot, and a Diamond tool/armour piece in which case you can use a smithing table without a trim. This is explored below in the Bastions section.
Most ores count towards this (Notably NOT coal):

Often, you'll find materials alongisde the Trim, so those cases will be looked at more below.
You might be wondering which structures are best for this goal. Below are the chances of getting at least 1 trim (taking all chests into account). Bear in mind that some of these structures are much quicker to fully loot than others.

Snout armour trim is an 8.3% chance in all bastion chests, rolled separately from all the other loot (meaning a chest without Snout does not contain more of anything else). This means that the Lodestone chest, outer Stables chests, and Centre Treasure chests can also have the trim.
Above is the chance to get a trim from the average bastion, but there is variance. The table below uses the lowest possible number of chests (bar corruption e.g. basalt and fort corruption), the average chests and the maximum chests per bastion to calculate the range of chance for Snout armour trim.
Quartz and Gold Ingots will probably be your go-to materials on this trim. Armour shouldn't be an issue with all the Gold, Iron, and Leather in bastions.
If you have a Treasure Bastion, you could equally complete this goal by upgrading a Diamond Tool/Armour piece to Netherite. The centre treasure chest(s) is guaranteed to have a Netherite Upgrade Template (100% chance). On top of this, 3 rolls are made which can be a Netherite Ingot which means per chest there is a 35.04% chance of getting an upgrade template and a Netherite Ingot. (1 out of 4 centres can have 2 chests, in which case you would have a 57.75% chance.)
You have a 95.79% chance of getting at least 1 diamond item (weapon, armour or diamonds) per centre treasure chest. (Even if you whiff it's a 13.48% chance from generic chests.)
If you whiff on Netherite Ingots, on average you won't get enough Ancient Debris / Scraps in Treasure, but you could check the chests anyway for Snout. (Even with 2 centre chests you'd need to check around 12 more chests on average to get enough Debris.)
The Rib armour trim is also an option if your line is more fort or if your bastion whiffed. It's a 6.7% chance (yeah yeah, laugh it up) from chests that you can find in the Bad Part of the fort. Whenever the fortress generates a bad part corner, it has a 33.3% chance of having a chest. In a fort with 4 chests, you have a 24.2% chance of getting Rib. It's unlikely to be worth going out of your way for.
Aside from Bastions, Strongholds and Mansions, the Jungle Temple has the highest chance of giving you an armour trim, and is much quicker to loot. Both chests in the Jungle Temple have a 33.33% chance to give you two Wild armour trims, meaning that you have a 55.56% overall from the structure.
For more information about looting Jungle Temples, see this page here. If you already have armour, the material you will likely be using is either gold or redstone. Gold is a 50.6% chance per chest, and 15 Redstone dust are guaranteed to generate in the mechanisms.
On average, a jungle temple gives 2.7 Iron, but you can get unlucky with iron.
Dune armour trim has a 46.06% chance of generating per Desert Temple (meaning this is the chance you get it at least once in all four chests), being a 14.3% chance per chest. This makes Desert Temples technically better than Ships for trims, but note that ships can offer more benefits widely in Draftout (aside from offering armour for this goal).
Looting Desert Temples is well worked through by speedrunners, with top tnt and bottom tnt being the best options for quick looting. You can also simply flick through the chests if blowing up the TNT has no benefit.
The Emeralds, Gold, spare Iron and Diamonds you can get from Temples can be used as the material along with Dune, but armour in deserts may be more difficult. You get on average 2.916 leather from a Temple, which means you might have enough for boots. Note that Camels do NOT drop leather, and killing rabbits for crafting hide into leather is too slow. Using your TNT to dig around for copper/iron might be sensible.
Coast is a 16.7% chance from all 3 possible ship chests, meaning for a full ship you have a 42.2% chance, 30.6% for a back ship or upside down front and 16.7% for other front ships. (Average for all ships is 33.1%.)
Shipwreck food chests have a 55.67% chance of having at least 1 leather armour piece. If it doesn't, you don't have enough Iron/Gold, and going to the BT is a good option for your line, there is a further 16.7% chance of getting a Leather Tunic from the BT.
The materials will come from the Treasure chest, lapis and emeralds are good choices since they often don't help with other goals, but there is also iron, gold and diamonds.
Ships are strong for Use Smithing Table but remember that they are only 42.2% for every full ship. Ships have 2.2 chests on average, so you will find Coast every 3.02 ships.
Sentry armour trim is a 25% chance from the only chest you get in Ouposts, meaning 1 in 4 have it. The chest can only have Iron as a possible material, but if you have a caged Iron golem outside you can kill that too. Killing nearby animals for Leather can make this a quick goal if you did get it early.
Eye armour trim is a 100% drop chance in Strongold library chests. Nearly all strongholds will have at least 1 library, but even if it doesn't, the altar chests have also have a 10% chance of having Eye. A stronghold with all 4 altar chests and no libraries has a 34.49% chance of having Eye.
You can also get Spire from End Cities but that should be irrelevant unless you're a gigachad or smth.
This section signals the part where methods get less reliable.
Host, Raiser, Shaper, Wayfinder you can all get from Trail Ruins from rare suspicious gravel on an 8.3% chance each. This comes out to 33.3% per rare suspicious gravel, but this isn't great since most gravel will be from the common loot pool and it can be a heavy time investment. To be fair, I haven't done that much research so there may be a way you could find rare sus gravel quickly.
Bolt is a 6.3% drop from Vaults and reward chests in TCs. Having to complete a whole trial just for a 6.3% chance is not realistic but checking the chests if you're already in a Trial Chamber is reasonable.
If for some reason you start some Ominous Trials, Flow armour trim is a 22.5% chance from Ominous Vaults.
The Vault loot table is also used by hallway dead end chests (left) and the secret chest in Entrance_1 (right), which has a 33.3% chance of being your entrance room.
The secret chest is under the tree part, and the other chests in that entrance room cannot have Bolt.
Vex armour trim is basically a given if you have a Mansion. It is a whopping 50% chance from Mansion chests that use the generic loot table (which is most of them) but whether it is worth the investment is up to you and your line.
Ward and Silence are part of the same roll in ancient city chests. You have a 6.25% chance in every chest, so there's a good chance for an ancient city to have at least 1 armour trim, but looting the whole thing is the annoying part.
Tide armour trim is a 20% drop from Elder guardians, meaning you have a 48.8% chance of getting it per Monument if you kill all elder guardians. This only seems ever worth considering if Obtain Sponge or Kill Elder Guardian is on the board, but if it is an option for you, see Kill Elder Guardian.
