Why was it traditionally made on Mondays? Because Monday was washing day, and Mammas all over South Louisiana could put a pot of beans to simmer all day long on the stove where it could tend itself while she tended to the laundry.

At dinner time, all you need to do is make a pot of fluffy white rice, and you serve the beans, along with a ladleful of the savory juices over it and you have a delicious meal. I like to add a green salad or a mess of lightly sauteed greens alongside, just to make it a balanced meal, but I have to admit to dining more than once on just a bowl of beans and rice for my supper.

Then, when the rice is done, I mix it with the beans and then sprinkle it with either roughly chopped fresh flat leaf parsley or cilantro. (Cilantro is so not traditional, but it tastes good, so there.)

Really, it is easier to just serve the beans over the rice, so in my method, I give instructions to make it both ways. I just like my way better, even if a lot of Creole folks would roll their eyes at me and think I was crazy.

If you are planning on using my rice pilaf method of cooking the rice, split your fresh aromatic vegetable ingredients into two equal parts, and set one of those halves aside to be used in cooking the rice. If you are just going to serve over plain white rice, then put all of the aromatics in with the beans.

Add the ham hock, the broth or stock, the beans and the water, and bring to a boil over high heat. If you are cooking in a regular pan, cover, turn the heat down to low, and cook for about four hours, or until the beans are completely done. Stir now and then and make sure that the water level stays about an inch above the beans, adding water or broth as needed.

Simmered until softened, fatty, smokey, spicy, and utterly irresistible. Serve with plenty of fluffy white rice, lots of fresh sliced green onions, and definitely invite at least two friends over for Monday gossip and good times.

Dec 28 who wants to go grocery shopping again. I subbed red beans for 2 large cans of Lucks pinto beans. I subbed tomato paste for one 15 oz can of tomato sauce. No celery so used celery salt. Best I have ever made.

Fantastic and comforting! Plant based so I subbed field roast chorizo (not traditional, but had a nice smoky flavor- worked better than I expected) and veggie broth. Next time I would add one more can of beans, but overall it was a huge hit!! I served with cornbread. Thanks for the great, simple recipe.

I love Red Beans & Rice. This recipe was very simple and authentic to down south. I did have to add another can of beans, because I felt like there was less beans than other ingredients in the dish. I also added 1/2 tsp of liquid smoke. Otherwise, it was a very simple and delicious recipe.

This is my go-to red beans and rice recipe. Everyone loves it b/c it is SO good! Its one of only 2 recipes that my extremely picky 13 yr old son actively requests. My only caution is to know the heat/salt/flavor of your Cajun seasoning and keep it in mind as all brands have different levels.

I did add a little extra broth and let it simmer a bit longer and it thickened up nicely, smaahwd about half the beans and it was perfect. With spicy Anidoulle sausage it had just the right amount of heat without losing flavor. Everything in the recipe is spot on.

Another nutritional worry is the rice itself, which most often is polished, white rice. The processing that turns brown rice into white removes the bran and germ layers, along with much of the healthy oils, iron, magnesium and vitamins B1 and B3. What's left behind is a starchy grain with a high glycemic index, meaning that it raises a person's blood sugar level after eating and doesn't fill them up for very long.

A recent study in the British Medical Journal even found that eating white rice is associated with a higher risk of Type II diabetes, and diabetes rates are rising worldwide. Brown rice would be better, Campos says.
