Having a weird experience with my new iPhone because so many things are different. One big issue I have is I use the Opera and Chrome browsers on iPhone a lot to watch videos on YouTube and other sites

I don't want this to happen. On Android, the browsers play the videos in full screen using the video player that the respective website uses. For example the YouTube video player in full screen looks exactly like the YouTube video player is designed to look in full screen on a browser app. See link below for this

double tapping on the left and right sides of the full screen zooms into the video which is not what I want. If you did this same thing for a full screen video on Android on an Opera browser the video either skips forward 10 second or backward by 10 seconds.

How can I disable this default video player which plays on all web browsers? I want the videos to play on the browsers on whatever video player the website uses(the video player that belongs to that website)

I have the same issue. I can't get the tag to work on Safari Desktop, despite having no issues with every other browser.Workarounds here shouldn't be necessary. Apple need to provide a solution. The Apple documentation says that the video html tags work in Safari.

Playing YouTube videos in the background in Android can be done in Firefox in a similar manner to the one above for iPhone.
