I installed the font set from Google, and do not see a problem with any of the 4 basic stylings (bolding/italic combos), nor with kerning which works fine as far as I can tell. Tried with 4pt, 12pt and 48pt sizes, and the rendering in normal edit window is as expected.

Did you actually install the font, or do you have a file just requesting the font? Writer will display the preferred font for selected text even when it is not installed on your system. In such cases rendering will pick that font from those available on your system which, according to certain parameters, is deemed to be most similar.

Curious to know if anyone has had any issues when adding a new font to your pdf adobe, and when editing within the pdf it wont take the font out of italic mode and let the user switch it to standard.

Always make sure to read the license for each font you use. Most of the fonts in the collection use the SIL Open Font License, v1.1. Some fonts use the Apache 2 license. The Ubuntu fonts use the Ubuntu Font License v1.0.

The choice between Arimo (above) and Roboto (suggested by DavidO) is a matter of taste. Roboto loads slightly faster, but Arimo doesn't need to load at all if Liberation Sans is installed. As both Arimo and Roboto are Google fonts, there's no point in using one as a fallback for the other.

It's not in Google fonts (I think), but the .ttf can easily be converted for @font-face. I find Liberation Sans really beautiful. Plus it renders REALLY well in most browsers, and it's free for personal and commercial use:
