A spiral mixer has a fixed dough hook that spins in place in the head of the mixer as the bowl rotates. Due to the design of the hook and its motion, it is incredibly efficient at quickly strengthening bread dough. Additionally, it incorporates a relatively large amount of air into the dough during mixing, which can help result in a more open loaf of bread.

As you can see above, the Famag has the breaker bar attached with two large screws to the front of the tilting mixer head. When the mixing bowl is in place, and the head is lowered, the bar is mostly centered within the mixing bowl.

Using the mixer is incredibly straightforward. I unscrew one of the screw levers that secure the tilt head and hinge it upward. Then, I remove the mixing bowl by turning the bottom locking plate and place the bowl on my kitchen scale. Surprisingly, the tall 8kg capacity Famag mixing bowl fits (barely) on my favorite baking scale, the My Weigh KD8000 scale, which is handy.

Note: Some older Famag mixers may have a wing nut instead of the straight lever you see above. Mine had the wing nuts, but Pleasant Hill Grain sent me a set of straight levers that come with newer Famag mixers.

I like to keep a magnetic timer attached to the top of the Famag spiral dough mixer. When I push on the button to start mixing, I start the timer. This helps me keep track of mixing times, and I can mostly walk away and do other baking tasks.

The Famag dough mixer is a heavy piece of machinery. While it is possible to pick it up and move it around your kitchen (and I do this periodically), I prefer to keep it on a metal cart with castors for rolling around.

I like to add water to the mixing bowl first, then the flour and other ingredients. In addition, I use a plastic scraper to scrape the sides of the dough while mixing to prevent dry flour accumulation. Finally, add a little water while the mixer runs to help loosen the dried flour.

I use mine indeed as an instrument.

Cutting/boosting frequencies and carving/sculpting the sound (semi parametric swept bell EQ with a wide Q and frequency range that covers nearly 7 octaves). It allows me to have my mixer actually serving me as an extra piece of musical source.

Option to drive any channel into clipping gives a lot of extra colouring. By varying the maximum signal level the channel input pre-amplifier can pass (headroom) before it is driven into clipping (distortion).

Some folks use the mixer of old cassette recorders, both playing a cassette as a sort of sampler/instrument as well as feeding external signals through the cassette mixer. Some older machines because of age and neglect or maybe were always crap can alter and carve up sounds in peculiar ways. At some extreme levels and gain it can also sort of self resonate or sound like a heavily drenched kinda drone effect. A lot depends on the machine and source signal of course.

Digital mixers and automation is also something to consider. You can set up random parameter shifts, quick shifts in frequencies, frequency drop outs, gain staging, etc. Like sketchdashaman said, these are not particularly good at feedback though. You can get clipping, which on a drum track could be cool or maybe a kinda choppy effect on a lead but it could be tricky.

Oh and then there is input overdrive methods. The classic gabber hardcore kick sound is based on that. Feeds the output of one hard driven channel into the input of the next, hard driven again. Some Mackie mixers are famous for achieving that sound.

I have been to whole-day workshop of her and as far as I can remember she sends clips from Ableton to several channels of her mixer.

She can then use AUX-sends to send these clips back to her Laptop where she uses Traktor effects. These effected tracks are routed back to the mixer (with a little delay, which is actually intended).

In this way she can play with the feedback and effects to create these noisy grainy structures.

I guess the problem is with presets: after selecting a brush mixer preset, ad soon as I change the brush size, the sample color turns black, even though the setting are set to clean the brush everytime.

Scenario: Each time the mixer brush is newly selected from Tool Presets, it will cause problems on first stroke. Undo, then second stroke yields a different (normal) result. Selecting a new mixer brush preset yet again results in the same behaviour.

First off, Shotcut is an amazing video editor. It is quite capable and I like it a lot. One feature that would allow me to keep using the program is an audio mixing panel so you can adjust the levels of separate tracks with ease. Also the ability to keyframe the fader would be great. The image below is what a mixing panel in an nle looks like. And then if you could control it with a mackie or midi usb controller.

Sourdough pizza dough is the most amazing pizza you will eat. There is something truly delicious about the complex flavors and crispy yet soft base. This recipe uses a stand mixer or Thermomix to mix the dough. It needs a lot of kneading and this makes the process much easier and quicker, without compromising on flavor or texture.

Use a dough scraper to divide the dough into pieces (around 290g each is a good size) or you can just eyeball it. Roll it into a ball and then use your fingers to push the dough out. It will be quite stretchy and elastic and shouldn't be sticky because you developed the gluten with your Thermomix or stand mixer.
