Baked Striped Bass Recipe with Orange-Lime Sauce

1 whole striped bass, 6 pounds scaled and cleaned

3 bay leaves

extra virgin olive oil

1/4 cup of water

5 oranges

5 limes

salt and pepper

First, preheat your oven to 425 degrees. Then place the whole striped bass into a large baking dish. Season the inside of the fish cavity with salt and pepper. Drizzle the inside and out with the olive oil. And place the 3 bay leaves in the cavity. Add 1/4 cup of water in the baking dish. Now bake it for about 30 minutes or until the fish is done cooking.

While the fish is cooking, squeeze the juice from the oranges and the limes into a saucepan. Mix in 1/2 cup of olive oil, and salt and pepper to taste. Heat over medium heat. Just as it begins to simmer, turn heat down to low just to keep it warm while the fish cooks. Serve the orange lime sauce with the striped bass. You can pour it right on top of the fish meat on your plate or use it as a dip.

Note: You can also substitute the olive oil for butter or margarine if you want.
