History of Recipe: A few years ago I had a passion fruit margarita while on a date with my husband. I am not a big fan of alcoholic beverages but this was one I really enjoyed and have spent a good amount of time trying to find one that tasted similar to the one I had on my date and I could make at home. 1 cup tequila
1 cup passion fruit nectar
1/4 cup orange-flavored liqueur
2 teaspoons superfine sugar
a pinch of salt
4 lime wedges
crushed ice
cocktail shaker
1.)Combine tequila, passion fruit nectar, orange-flavored liqueur, superfine sugar and a pinch of salt in a cocktail shaker.
2.)Shake well, then pour into 4 short glasses filled with crushed ice.
3.) Rub the rims with lime wedges, then add to the drink.
History of Recipe: Coquito is an authentic Puerto Rican beverage and is a traditional Christmas drink. Its name means "small coconut" in Spanish. You can make it with or without rum. This version is made with rum but you can find the same recipe without rum in the non-alcoholic beverages section of the cookbook.

1 can coconut cream (15 oz) such as Coco Lopez
1 can condensed milk (14oz)
1 can evaporated milk (such as Carnation)
½ to 1 cup Bacardi rum (optional)
½ tsp. cinnamon
¼ tsp nutmeg
Mix all ingredients in the blender. Taste and add more rum if you like it stronger. You can add 1-2 cup of water to prevent the coquito from getting thicker later in the fridge. (I personally don’t add water) Pour into a bottle and refrigerate well. Make ahead for richer flavor. Serve in small glassware.
Adjust the rum and cinnamon to taste.
Some ideas:
1. You can substitute the rum for a scoop of vanilla ice-cream and serve it as a dessert.
2. Some people add 2 or 3 eggs to this recipe, but we will call it Ponche no Coquito. Ponche will be similar to Eggnog.
