These bars have become a popular offering at local cafes here in Lake Mac. Rich and chewy, they are absolutely delicious. Supposedly a "healthy" option, but they taste way too good for that, although my picture doesn't do them justice.
This recipe comes from the Bec's Table website. Bec's original recipe uses a Theromix maching but I just make do with an old fashioned mixing bowl.
70g boiling water
100g molasses, treacle or golden syrup
100g dates
60g butter, cut into small cubes and softened to room temperature
150g dried figs
1 tsp baking soda
3/4 tsp salt
140g brown sugar
60g espresso coffee (2 shots)
1 large egg
1 tsp vanilla
1/2 tsp baking powder
200g plain flour
50g coarsely choppen walnuts
150g seeds (pepita, almonds, sunflower or whatever you fancy)
Mixing bowl
Small saucepan
Mini Loaf Pan cake tin
Preheat oven to 170o fan forced
Grease mini loaf pan
Weigh water and molasses into a small saucepan and warm over a low heat until well combined (2-3 mins). Put aside and allow to cool.
Chop dates and figs into small pieces
Place dates, butter, figs, baking soda, salt, brown sugar and coffee into a mixing bowl
Once the molasses mix has cooled add it to the mixing bowl and stir through briefly
Add the egg, vanilla, baking powder and flour to the mixing bowl and stir untill well mixed and a batter forms
Pour the batter into the greased pan and sprinkle over the nuts and seeds. Use a fork to push some of the nuts and seeds down into the batter
Bake for 20-25 minutes or until a toothpick inserted comes out clean. (Don't be afraid to let them well caramelise.)
