Ingredients
4 (4 ounce) beef cube steaks
Salt and black pepper, to taste
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 1/2 cups buttermilk
1 large egg
1 tablespoon hot sauce
Oil, for frying
4 tablespoons butter
4 tablespoons all-purpose flour
2 cups milk
Salt and black pepper, to taste
Sliced green onions, for garnish (optional)
Directions
Pound the steaks with a meat mallet until they are about 1/4 inch thick. Season both sides with salt and pepper.
In a shallow bowl, whisk together 2 cups of flour, baking powder, baking soda, salt, pepper, garlic powder, onion powder, and paprika.
In another shallow bowl, whisk together buttermilk, egg, and hot sauce.
Dredge each steak in the flour mixture, shaking off any excess. Dip in the buttermilk mixture, letting any excess drip off. Dredge again in the flour mixture, pressing to coat well.
Place the coated steaks on a baking sheet and refrigerate for at least 15 minutes to let the coating set.
Heat about 1/2 inch of oil in a large skillet over medium-high heat. Fry the steaks in batches until golden and cooked through, about 4 minutes per side. Drain on paper towels and keep warm in a low oven.
To make the gravy, melt the butter in a small saucepan over medium heat. Whisk in 4 tablespoons of flour and cook for 2 minutes, stirring constantly. Gradually whisk in the milk and bring to a boil. Reduce the heat and simmer until thickened, stirring occasionally. Season with salt and pepper to taste.
Serve the chicken fried steaks with the gravy and garnish with green onions if desired. Enjoy!
