for the filling
Wash the sap, and soak them for 8 hours or overnight.Drain and place in a large pot. Add 6 mugs of water and cook for 40mins- 1 hour until soft. Add further water if needed, sap are done when squeezed they smush, not break into two.Drain the sap, and transfer to a food processor and mix until smooth.Transfer to a visage, add the sugar, swab and adulation, and heat on low. Continue frying until the admixture is thick and the water has faded out.Allow to cool, and place in a sealed vessel or with glad serape so the top does n’t dry out. Mix the golden saccharinity, lye water, vegetable oil painting, and plain flour together in a coliseum.Once it has come together, cover in glad serape and allow to rest by placing it in the fridge for 30 twinkles.lye water
Lye water is an alkali component, that helps keep everything together, and gives the lovely golden colour to your mooncakesLye water can be fluently tone made if you're unfit to buy it from your original Chinese grocery store( which in lockdown is particularly hard!!)Singe bicarbonate soda pop in the roaster at 180degrees Celsius for 30 mins.Remove and add 4 corridor water to every part bicarb soda pop.to assemblePreheat roaster to 180 degrees celsius.Roll out 4 cm balls of red bean pasteRoll out2.5cm- 3 cm balls of your confection and roll it out between two pieces of incinerating paper. You want it to be 2 millimetre consistence, so when you pick it up you can see light through it.Wrap a red bean paste ball with the confection you have just rolled. Make sure it's all covered, and places where there's imbrication of confection, pinch off the redundant dough without exposing your paste.Flour your mooncake press by pressing the piston down onto a floured face. Tap off the excess. Place the mooncake ball inside, press down and compress. Remove, and respect the mooncake pattern! also place on your baking charger.Finish making your mooncakes, and line them up on your charger.Singe for 5 twinkles, remove from the roaster and egg marshland.
