Brown Sugar Topped Rhubarb Cake
Ingredients (9x13 cake)
- 2 cups sugar
- 2 cups heavy whipping cream
- 2 eggs
- 3 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 4 cups rhubarb, sliced
- 2/3 cup brown sugar
Preheat oven to 350 degrees.
Grease a glass 9x13 baking dish. In a bowl, mix together all ingredients except brown sugar.
Pour into baking dish, then sprinkle brown sugar over the top.
Bake for 45 minutes, until the cake is set.
Remove from oven, cool and serve!
