This vanilla cake is the result of bringing together the best of Japanese sponge cakes and Western butter based cakes. It has the world renowned very soft, fluffy crumb of Japanese cakes and uses the Japanese baking method, combined with the buttery goodness and sweetness of Western cakes.

The use of hot milk with melted butter in a cake batter is another technique used in some types of Japanese sponge cakes (such as this one from Chopstick Chronicles, a Japanese food blog). Interestingly, I recently discovered it is also used in a traditional Southern cake called Hot Milk Cakes.

Made this last night, and OMG it is divine! The texture is mind-bogglingly creamy. I have made a great many cakes in my time, and this recipe is my new go-to cake recipe! whipping the eggs like that is absolutely brilliant!

Divide the batter between 3 9-inch cake pans. You can squeeze the cake batter in 3 8-inch cake pans if needed, but be sure to extend the bake time as noted in the recipe. Always line your round pans with parchment paper rounds before adding the batter. Cool baked cakes for 20 minutes in the cake pans, and then remove the warm cakes and place on a wire rack to cool completely.

Use a flat icing spatula to spread on the frosting. Icing spatulas are handy if you decorate cakes and cupcakes often. Then you can run a bench scraper around the sides of the cake to smooth out the crumb coat as well as the top layer of frosting. You can watch me use both in the video tutorial below.

I wanted to make sure it had the most perfectly light vanilla sponge which was packed with flavour but also suitable for other occasions other than birthdays (like Tuesdays, Tuesdays are a nice cakey day).

And so here we are. I'm calling this the most perfect vegan birthday cake because I truly stand by this recipe. There are a few ingredients that just guarantee perfection every time. The texture of the vegan vanilla cake is insanely light and fluffy and it balances beautifully with my vegan vanilla buttercream. Trust me, I couldn't believe how delicate this cake turned out.

I wouldn't advise making subs or swaps with this vegan birthday cake recipe. The vegan vanilla cake is super delicate and I've really tailored it to be the perfect texture, so you'll inevitably end up with different results if you make swaps. However, if you truly HAVE to, here are my suggestions.
