Hamburger Stroganoff

Hamburger Stroganoff - Slightly higher in the carb department. Also not dairy free, but is low in lactose if you use yogurt.

This recipe freezes well and makes about 8 to 10 servings:

1) Cook 2lbs ground beef, 1/4 cup chopped onion, and 1 teaspoon sea salt in butter or olive oil.

2) Sprinkle 2-3 tablespoons of flour (or gluten free flour) over the meat and cook a little more.

3) Mix together 2 cups of cold milk (or almond milk), 1 heaping teaspoon of chicken broth paste, 1 tablespoon corn starch, 1 teaspoon cream of tartar.

4) Pour the milk mixture over the meat and cook until thick and bubbling.

5) Remove from heat and mix in 1-2 cups (amount depends on personal preference) of sour cream or plain full fat yogurt.

6) Serve over noodles, rice, riced cauliflower OR all by itself.

Last picture shows how I freeze it with riced cauliflower and veggies to take to school.

Slow Cooker Thai Chicken

Simply dump everything in the crock pot and cook low 6-8 hours.

1 lb Chicken Thighs

1 cup Canned Full Fat Coconut Milk

3 Tablespoons Natural Peanut Butter

3 Garlic Cloves, crushed and chopped

2 Tablespoons Erythritol (or other sweetener)

2 Tablespoons Soy Sauce or Coconut Aminos

1 Tablespoon Lime Juice

1 Tablespoon Curry Powder

1 Tablespoon Ginger Powder

1 teaspoon salt
