Fermented cabbage tonic is introduced in the early stages of the GAPS Introduction Diet as a gentle way to begin incorporating beneficial fermented foods. It is a natural probiotic drink full of beneficial bacteria that is used to stimulate digestion prior to a meal and encourage a healthy balance of gut microbes. Beginning with small amounts of the liquid allows the digestive system to gradually adapt to fermented foods while monitoring individual tolerance. As digestive function improves, larger amounts and eventually the fermented vegetables (sauerkraut) may be introduced.
Chopping board
Knife or mandolin
500ml glass jar with lid
Measuring cup
Glass bowl
¼ Cabbage
1 tsp Celtic sea salt
¼ cup Homemade Whey
500 ml filtered water
Finely chop the cabbage
Add salt and massage for 5 min to draw out liquid
Transfer cabbage + liquid into a clean glass jar
Add ¼ cup of whey
Add filtered water to the shoulder of the jar (leave 2–3 cm space at the top of the jar)
Cap and seal tightly
Gently shake to combine ingredients
Ferment for 2-5 days (or until lid becomes taut under the pressure of your finger)
When ready, strain off liquid into a fresh glass jar (this is your tonic)
Start small: 1–2 tablespoons daily
Can gradually increase if tolerated
Best taken: On its own or diluted in warm (not hot) water
Add to meat stock (once cooled)
Leave at room temperature (18–22°C ideal)
Store in fridge for 2 - 4 weeks
