Herbs and Plants: They were familiar with and used aromatic plants. Herbs like meadowsweet, rosemary, lavender, and mint were likely used to make things smell better, possibly strewn on floors or added to washing water for hair, hands, or clothes. Mint was also used for dental hygiene.
Leatherworking and Slaughter: Less pleasant odors would have come from certain industries. Processes like tanning leather (even without urine, the scraping stage was essentially a rotting process) and the period of animal slaughter in November (called 'Blood Month') would have produced strong, foul smells in and around those specific areas.
