Pepper Soup

Ingredients
2 & 1/2 quarts of water, filtered
2 & 3/4 lb. of bite-sized cut chicken meat
3 tbsp. of pepper soup spice blend, prepared
1 bruised lemongrass stalk – cut in three pieces and tie them in bundles
1 or 2 bouillon cubes, vegetable
Red chilies pepper, ground, as desired
Salt, kosher, as desired
2 tsp. of crayfish, ground
Directions
Step 1
Place cut-up pieces of chicken in large-sized pot. Add 2 cups of water.
Step 2
Then add 1 tbsp. of spice blend, bouillon cubes, kosher salt (if desired), red chilies, lemongrass and crayfish. Stir. Let mixture simmer over low heat till liquid starts boiling.
Step 3
As liquid boils, add remainder of water & remainder of spice blend. Cook over med-low heat. Season as desired. Simmer till the meat has become soft. Serve.
