Ingredients
1 cup of peeled beans, brown
Pepper, cayenne
1/4 cup of oil, palm
2 tbsp. of crayfish, ground
2 stock cubes, beef
Salt, kosher, as desired
3 cups of beef chunks
Directions
Step 1
Boil the beans with sufficient water on med. heat till soft.
Step 2
Boil meat with onions, kosher salt & stock cubes till tender. Separate meat from stock. Set aside.
Step 3
Blend the cooked beans in food processor till smooth. Set them aside. Pass through sieve. Discard chaff.
Step 4
Place pan over med. heat. Add the oil. Heat for two to three minutes.
Step 5
Stir the pureed beans in oil. Then, add water as needed for the consistency you desire.
Step 6
Add meat & cayenne pepper. Combine well. Reduce heat & allow to cook for 8-10 minutes. Check to ensure it doesn’t burn. Add additional water as needed.
Step 7
Add stock cube, crayfish & salt. Cook for three more minutes. Serve.
