Nigerian Peppered Beef Tongue

Ingredients
3 pounds of beef tongue
2 & 1/2 tsp. of chili blend spices
2 bell peppers, large, 1 yellow & 1 orange
1 plum tomato, fresh
1 onion bulb, large + 1/2 bulb for meat boiling
3 garlic cloves + 2 more for meat boiling
3 chilies, scotch bonnet
1 chili, jalapeño
1 chili, poblano
2 peppers, serrano
1/4 cup of oil, olive
2 vegetable cubes + 2 more for meat boiling
2 tsp. of salt, kosher + extra as needed
1/2 tsp. of thyme, dry, +/- as desired
1 dash pepper, black
To garnish: 2 tbsp. of chopped parsley, bell peppers and green onions
Directions
Step 1
Clean beef tongue well. Dry it with layered paper towels. Cut in bite-sized pieces. Add to large pot.
Step 2
Add 2 garlic cloves, 1/2 onion bulb, 1 tsp. of chili spice blend, 2 vegetable cubes, & 1 tsp. of kosher salt. Cover meat well with water.
Step 3
Cover pot. Cook till tender. Strain, then set meat aside.
Quarter onions and bell peppers. To food processor, add garlic, onions, tomato & peppers, with the exception of one serrano. Blend roughly, leaving some visible texture.
Step 4
Set another pan on stove. Add oil. Warm oil up. Add pepper blend to heated oil and stir.
Step 5
Allow mixture to simmer. Add salt and stir. Add 1 tsp. of chili spice blend and stir. Add vegetable cubes, pepper & thyme and stir well. Taste and adjust seasoning as desired.
Step 6
Cover pan. Cook over med-low heat till liquid has reduced visibly. This could take 15 to 20 minutes or so.
