Ingredients
3 cups of peas, black-eyed
1 bell pepper, red
1 onion, medium
1 turkey wing, roasted
1 pepper, habanero
1 tbsp. of crayfish, ground
1/2 tbsp. of seasoning blend
1/4 cup of oil, palm, +/- as desired
6-9 cups of water, filtered
Salt, kosher, as desired
Directions
Step 1
Pick out any debris from beans. Rinse them and drain well.
Step 2
Place beans in pot. Add turkey wings, onions, habanero and bell peppers. Add the water. Allow to cook for about an hour, till beans are tender.
Step 3
Remove onions, bell peppers and habanero. Blend. Add back to beans.
Step 4
Remove turkey and debone. Cut meat in small-sized pieces. Put back in bean pot.
Step 5
Add kosher salt, crayfish, oil and seasoning powder. Add water as needed. Stir and combine well.
Allow to simmer for 3-5 minutes. Serve.
