Ingredients
4 boneless skinless chicken breasts (about 6 ounces each)
Salt and pepper, to taste
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/4 cup panko breadcrumbs
2 tablespoons olive oil
2 tablespoons butter
1/4 cup white wine (or chicken broth)
1/4 cup lemon juice (about 1 lemon)
2 tablespoons fresh thyme leaves (or 1 teaspoon dried thyme)
Lemon slices and fresh thyme sprigs, for garnish (optional)
Directions
Preheat oven to 375ÂF and lightly grease a baking dish.
Season the chicken breasts with salt and pepper on both sides.
In a shallow bowl, combine the flour, Parmesan cheese, and panko breadcrumbs. Mix well.
Dredge the chicken breasts in the flour mixture, shaking off any excess.
In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and cook for about 4 minutes per side, or until golden and crisp. Transfer the chicken to the prepared baking dish.
In the same skillet over medium heat, melt the butter. Add the wine (or broth), lemon juice, and thyme. Bring to a boil and cook for about 2 minutes, scraping up any brown bits from the bottom of the pan.
Pour the sauce over the chicken in the baking dish. Bake for 15 to 20 minutes, or until the chicken is cooked through and the sauce is bubbly.
Garnish with lemon slices and fresh thyme sprigs if desired. Enjoy!
Tips and Variations
You can use chicken thighs instead of chicken breasts if you prefer. Adjust the cooking time accordingly.
You can also use regular breadcrumbs instead of panko breadcrumbs, but panko gives a crispier texture.
