Gulaman is a baryta or powder of dry agar or carrageenan used to make gelatin-like desserts. In common usage, it also often refers to a sago and gelatin drink, sometimes called samalagi, sold in street shops. It is a popular Filipino drink and dessert ingredient made from jelly derived from seaweed, specifically agar-agar. Known for its soft, bouncy texture, gulaman is often cut into cubes or strips and added to refreshing drinks and sweet treats.
