The focus of the group is to apply fermentation technology to explore the intersection of probiotics and the production of microbial/microbe enhanced proteins for sustainable food production. This group is focused on food research that takes account of global nutrition, health, and the environment for the purpose of sustainably feeding the world, particularly diet that are tailored to the growing population in sub-Saharan Africa.
Sustainable proteins are increasingly being seen as the future of food but there is little discussion about how it would beneficially impact the food systems in Africa. The need for sustainable food systems has brought plant-based, fermentation-based proteins or a hybrid of both to the forefront of agricultural research and industrial innovation. Using the knowledge of fermentation technology to produce microbial or microbially enhanced protein foods and ingredients with the potential to be formulated into rich probiotic products can be a pathway to feeding our growing population with nutritious foods.
