Your Secret Ingredient Pasta-less Lasagna

YSI Pasta-less Lasagna

Serves 9


2 green zucchinis

1 large eggplant

Tomato sauce

Parmesan cheese, shredded

 Fresh mozzarella cheese, very small ball, sliced thinly 

salt and pepper

olive oil  

To Prepare:

Slice the zucchini lengthwise (so that it forms about 8 long, thin slices)  and slice the eggplant widthwise, creating circles.

Place on baking sheet and sprinkle with olive oil, salt, and pepper. Roast at 425 F for 20-25 minutes.

In a small glass pan (8 by 8 will work great) start by layering the bottom with tomato sauce. Then add a layer of the grilled eggplant and zucchini. Then add more sauce, sprinkle parmesan cheese, and place 2-3 slices of the mozzarella (spread out) on top. Continue layering with the vegetables, then the sauce, then the cheeses, until the pan is filled and all the vegetables are used. Sprinkle the top with parmesan cheese. Cover very loosely with aluminum foil.  

Bake at 350 F for 30-35 minutes or until bubbling.
