Apple Pudding Cake

Apple Pudding Cake

4 cups grated apples (loosely packed), I use a green, tart apple

2 eggs

1 1/2 C sugar

1/2 C oil

Mix together eggs,  sugar and oil.

2 C flour

2 tsp baking soda

1 tsp salt

1/2 tsp nutmeg

2 tsp cinnamon

Add in dry ingredients and stir until well mixed.  Pour into greased 9 x 13.

Bake at 350 for 40 minutes.

Caramel Sauce

1/2 C butter

1/2 C evaporated milk or cream

1/2 C brown sugar

1/2 C white sugar

1 1/2 tsp. vanilla.

Cook in saucepan over medium heat until melted and thickened.

Serve over cake and top with whipped cream.
