Easy and Delicious Peach and Blueberry Tart

  • 3 large peaches, washed and thinly sliced
  • 1 cup fresh blueberries
  • 1 sheet puff pastry, thawed
  • 1 egg
  • 1 Tablespoon water
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon cornstarch
For the glaze:
  • 1/2 cup confectioner's sugar
  • 1/2 teaspoon vanilla
  • 1- 2 Tablespoons milk or heavy cream
To Make:
  1. Preheat the oven to 400 degrees (F). Line a large baking sheet with parchment paper and set aside.
  2. Thaw the puff pastry in the fridge until it can be easily unfolded.
  3. Thinly slice peaches and place them in a large mixing bowl.
  4. Mix together the sugar, salt, cinnamon and cornstarch. Add to peaches and mix well till all are coated.
  5. Carefully unfold the thawed puff pastry and place on prepared baking sheet.
  6. Layer the peaches in three rows on the pastry leaving about a 1" boarder around the edges. Top with fresh blueberries.
  7. In a small bowl mix together the egg and 1 Tablespoon water. Brush the exposed layers of pastry with egg mixture.
  8. Bake for 15-18 minutes or until crust is puffed up and golden brown.
  9. To make the glaze: In a small bowl combine the confectioner's sugar, vanilla and milk or cream. Drizzle over tart before serving.
