Aggressive Swans' Walnut, Cranberry and Blue Cheese Pasta

-Pasta of your choice 
-Olive oil 
-Red onions 
-Oyster mushrooms 
-Pinoli or walnuts 
-St Augur blue cheese
 -Cranberries (best fresh, can be dried though) 
-Salt & Pepper 

1. Pour olive oil on a medium/high-heated pan (optional: add some butter).
2. Add chopped red onions and stir until they begin to brown.
3. Reduce heat to medium and add sliced oyster shrooms and nuts of your choice, let them sit for 3-4 minutes.
4. Melt chunks of St Augur until smooth.
5. Add cranberries and stir until just before the juice starts to show in the sauce.
6. Mix with pasta cooked al dente, add parsley, grind salt and pepper to taste.
