Lemon Infused Sugar Cubes


1 1/2 cups white, granulated sugar

2 1/2 tsp plain water

3/4 tsp lemon extract

3 drops yellow food coloring


Place sugar in a bowl by itself.

In a separate, small bowl, mix water, lemon extract and food coloring together.

Pour mixture over sugar and stir with a fork until thoroughly and evenly combined.

The texture of the sugar mixture should look and feel like wet sand and be slightly fluffy.  Add sugar and/or water in small quantities, if needed, to achieve the correct texture.

Place the sugar mixture onto a flat surface lined with parchment or waxed paper.

Use your hands to compress, flatten and shape the sugar into a rectangle or square, roughly 1/2" thick.

Cut sugar into the desired shapes using cookie cutters, a knife, etc. 

Allow to dry and harden completely before handling - start checking after 30 minutes.


Try different extract flavors for various tastes.

Increase or decrease the amount of food coloring based on the intensity of the color desired.  If in doubt, start with less and then increase the number of drops as needed.

Cut the sugar into shapes while it is soft.

Drying time will vary based on the amount of humidity in the air.

When completely dry, you should be able to gently squeeze the shape without it breaking apart.

Store in a regular sugar bowl or an airtight container.
