Kitty's Brown Bread or A Fistful of Oatmeal
Classic Irish Brown Bread Recipe

About this recipe

This is every Irish granny's top recipe, whether she's a witch or not. Besides being delicious, this brown bread is highly nutritious and high in fibre.

  • You need
  • 12 ounces of plain flour
  • teaspoon of baking powder
  • teaspoon of bread soda
  • 7 ounces of Milford stoneground wholemeal flour
  • 1 pint buttermilk
  • A fistful of oatmeal
  • A fistful of oat bran
  • A fistful of wheat bran
  • 2 teaspoons of pumpkin seeds
  • 2 teaspoons of sesame seeds
  • 2 teaspoons of linseeds

Switch your oven on to 200 degrees C.
Mix all the dry ingredients, then make a well in the middle and slowly add the buttermilk.
Add more buttermilk if needed.
Knead the mixture and form into a circle.
Cut a cross on top and poke a few holes.
Sprinkle some flour on a baking tray and put the bread on it and into the oven for 45 minutes.
Allow to cool for a while, by wrapping in a clean tea towel and placing on a cooling rack.

Magic tips
Enjoy with butter or low fat spread while it's still slightly warm. Superb with orange marmalade or Wexford strawberry jam. And, of course, a hot cup of strong tea. Lyons or Barrys, please!
