Cookbook


 

Delicious home-cooked recipes suggested by the villagers of Widdington Essex

 

 

Ye Olde Rectory cottage 

Garden Plum Bread

 

2 cups Plums, chopped up in chunks with the skin still on.

(damson plums, dried plums Nectarines or Peaches can also be used.)

 

3 cups flour.

 

1 cup butter

(or for lower fat content substitued ½ cup butter for ½ cup of apple mash.)

 

1 ½ cups sugar.

 

1 teaspoon vanilla.

 

4 eggs.

 

1 teaspoon salt.

 

1 teaspoon cream of tartar.

 

1 teaspoon baking soda.

 

3/4 cup vanilla yogurt.

(or any berry flavoured yogurt.

 

Cream all the butter, sugar and vanilla together until fluffy.

 

Add an egg one at a time, beat after each addition.

 

Sift together the flour, salt, cream of tartar, and baking soda.

 

Add about 1/3 of the yogurt to the mixture then 1/3 of the flour mixture, alternating until all is added.


Fold the plum chunks into the batter.

 
Fill two greased and floured bread pans with mixture.

 

Bake at 180 c. for about 50-55 minutes.

(fan assisted drop to 170 c)

 

Cool in the pan for about 15 minutes and turn onto a platter.

 

Makes Two Loaves (freezes well)
