Crock Pot Black Bean Chili and Garlic Bread

 Here is an easy and delicious crock pot chili recipe.  I have never been a huge fan of beans and therefore never liked eating chili, but as I get older I am trying new things.  I like this recipe because it is not all beans and I think black beans are best for a new bean eater like myself.  This recipe calls for beef but if you are vegetarian you can omit the beef, use tofu, or some other kind of meat substitute.
Crock Pot Black Bean Chili   
  • 3/4 cup cooked black beans (or 1 can)
  • 1 lb ground beef
  • 2 Tbs olive oil
  • 1 medium white onion chopped
  • 1 green bell pepper chopped
  • 1/2 cup diced green chili peppers
  • 3 Tbs tomato paste
  • 3-4 beef (or vegetable) bouillon cubes or base
  • 1 tsp minced garlic
  • 1/2 tsp ground cumin
  • 1/s tsp salt and pepper
  • shredded cheddar (optional)
1.  Brown the beef in oil with the onion and green pepper
2.  Combine all ingredients except the cheese
3.  Cook in crock pot 6-8 hours on low
4.  Serve hot sprinkled with cheese

   I like to eat this chili with garlic bread on the side.  It is good to dip in the chili.  We usually just buy a mini garlic loaf from the freezer section at the grocery store which takes about 9 minutes to cook.  You can also make your own by melting some butter and adding minced garlic; then spread the mixture on bread of choice and bake.
