Italian Chicken Wraps with Sundried Tomato Vinaigrette

Sandwich Ingredients:

    • meat from 1 rotisserie chicken, shredded (about 3 cups)
    • 2 medium plum tomatoes, chopped
    • 1/2 cup grated asiago cheese
    • 2 cups chopped romaine lettuce
    • 1/3 cup basil ribbons
    • 8 basil/tomato-flavored tortilla wraps

Dressing Ingredients:

    • 2 tablespoons chopped (drained) oil-packed sun-dried tomatoes
    • 2 tablespoons balsamic vinegar
    • 1 1/2 tablespoons olive oil (or use the oil from the sun-dried tomatoes)
    • 1 garlic clove, crushed
    • pinch of black pepper

-Whisk together the dressing ingredients in a small bowl. Set aside.

-Place the sandwich ingredients into a large bowl. Drizzle with the dressing. Stir

to combine.

-Place about 3/4 cup of chicken mixture onto each tortilla. Folding in the sides of the

tortilla, roll the tortilla to enclose the filling.
